- While the dough rests, dry roast the red chilies in a pan until fragrant, then crush them.
- In the same pan, add a little butter and fry the garlic cloves until they turn golden brown and aromatic.
- In a small bowl, mix the grated cheese, fried garlic, crushed red chilies, chopped green chilies, tandoori mayonnaise, and tomato ketchup. Stir until the mixture is well-combined and pasty.
- Divide the rested dough into equal-sized balls.
- On a floured surface, roll a dough ball into a large rectangular shape.
- Spread a thin layer of tomato sauce or ketchup down the center of the rectangle.
- Place a generous portion of the cheese-egg stuffing over the sauce. Top with extra grated cheese if desired.
- Using a knife, cut diagonal strips (about 1 inch wide) along both sides of the stuffing.
- Fold the strips over the filling one by one in an overlapping pattern to create a beautiful braided look. Press the ends to seal them.
- Heat a non-stick pan or tawa over medium heat and add a small dollop of butter.
- Carefully place the braided paratha onto the pan.
