Ingredients
  

For the Parathas
  • Whole-wheat Atta - 2 cups
  • Eggs - 2
  • Chilli flakes optional - as per taste
  • Salt - as per taste
  • Oil - 1 tsp+ a few drops for greasing the dough
  • Baking soda - 1 tsp
  • Baking powder - 1 tsp
For the Filling
  • Boiled Eggs - 2 grated
  • Parmesan Cheese - 1 inch cube/ Paratha optional
  • Salt - as per taste
  • Tomato Ketchup - 1 tsp
  • Tandoori Mayonnaise - 1 tsp
  • Black pepper powder - a pinch
  • Chilli flakes - as per taste optional
  • Green chilies - as per taste optional

Method
 

  1. Step 1 - Knead a Soft Dough
  2. Mix all the ingredients evenly with the wheat flour. Now add water in small batches for a super-soft consistency. The dough should be soft and pliable as shown in the video.
  3. After kneading, spread some oil onto the upper surface of the dough. Cover the dough for an hour to rest.

Step 2 - Make the Savory Cheese & Garlic Filling
  1. While the dough rests, dry roast the red chilies in a pan until fragrant, then crush them.
  2. In the same pan, add a little butter and fry the garlic cloves until they turn golden brown and aromatic.
  3. In a small bowl, mix the grated cheese, fried garlic, crushed red chilies, chopped green chilies, tandoori mayonnaise, and tomato ketchup. Stir until the mixture is well-combined and pasty.
Step 3 - Shape and Braid the Paratha
  1. Divide the rested dough into equal-sized balls.
  2. On a floured surface, roll a dough ball into a large rectangular shape.
  3. Spread a thin layer of tomato sauce or ketchup down the center of the rectangle.
  4. Place a generous portion of the cheese-egg stuffing over the sauce. Top with extra grated cheese if desired.
  5. Using a knife, cut diagonal strips (about 1 inch wide) along both sides of the stuffing.
  6. Fold the strips over the filling one by one in an overlapping pattern to create a beautiful braided look. Press the ends to seal them.
Step 4 - Cook to Golden Perfection
  1. Heat a non-stick pan or tawa over medium heat and add a small dollop of butter.
  2. Carefully place the braided paratha onto the pan.
  3. Cook for 3-4 minutes on each side, turning occasionally, until the crust is golden brown and the cheese inside has melted.
  4. Serve hot with a side of mint chutney or a protein-rich dip!
