INGREDIENTS
Carrots – 1 kg
Ghee – 3 tbsp
Refined Sugar – 3/4 cup or as per taste
Condensed Milk – 1 cup
Milk Powder – 1/2 cup
Raisins – 50 gms
Roasted Nuts – 1 cup
Green Cardamom – 3-4 (Finely grounded powder)
DIRECTION
- Peel and Chop the Carrots
Peel off the outer skin of the carrots and cut them in two halves. Wash and drain the water from the carrots.
- Boil and Mash the Carrots
Boil the carrots in the pressure cooker in a cup of water and wait for a whistle. Remove the cooker from gas oven and allow the carrots to cool down. Do not drain the water. You can use it in any vegetable curry.
Mash the carrots coarsely when they cool. - Cook the Halwa in a Pan
Heat 2 tbsp ghee in a pan on medium heat. Put the mashed carrots in the ghee when it melts. Fry the carrots until it turns soft and mushy. Now add the sugar and fry until it melts completely. Put the raisins and fry for about 1 minute on a low flame.
- Add Condensed Milk to the Halwa
If you do not have much time for cooking the carrots in milk, try this gajar ka halwa with condensed milk recipe. You can skip boiling the carrots in milk as they are already soft and mushy. Set the gas to low or medium flame when adding the condensed milk. Keep stirring to avoid burning or sticking at the base.
- Chop and Roast the Nuts
I prefer doing this during the preparation time when the carrots are boiling in the pressure cooker. You may add nuts of your choice in any quantity as per taste. I add finely chopped almonds, cashews, pistachios, and walnuts to enhance the nutrition balance. Roast them to a crispy texture and set aside for cooling.

#2. How to Make Gajar Halwa Without Mawa?
I use condensed milk to make carrot pudding fast. This is the best trick to make gajar halwa without mawa (khoya) and milk. Many people use full-cream milk to boil the carrots and add mawa for the smooth buttery indulgence. This takes more time and you may require 1 cup of sugar to get the desired sweetness. I boil the carrots before frying, so you may skip milk. Gajar ka halwa recipe condensed milk version is creamy and extremely delicious.
